  • 1 cup fresh fruit (I like strawberries but this is good with just about any fruit!)

  • 1 bell pepper, chopped

  • ½ red onion, diced

  • 1 jalapeño, chopped (do not include seeds for less spicy version)

  • 1 lime – zest and juice 

  • 1 tbsp extra virgin olive oil

  • 1 tsp fresh ginger root, grated

  • 1-2 tsp salt to taste

  • Lasts 2-3 days in fridge, then may get soggy.

  • Serve with your favorite chicken or fish and a side salad.

Strawberry Jalapeno Salsa

Roasted Veggie Pasta Salad with Pea Pesto

  • 3 salmon filets (about 4-oz each, cooked) 

  • 2 small shallots, diced [or 1/2 lg. onion]

  • 1 cup kale

  • 1/4 fresh parsley or 2 tsp dried

  • 1/4 cup avocado mayo

  • 1/4 cup ground flax

  • 1 lemon, zest & juice

  • 2 cloves garlic, minced

  • 2 tsp dijon mustard 

  • 1 tsp sea salt

  • In a food processor, add onion and garlic and pulse until finely minced.

  • Then add mayo, parsley, kale, flax, salt, lemon juice and zest and process until incorporated. 

  • Add salmon and pulse until mixture comes together.

  • To cook, add avo oil to skillet on medium heat... Form patties and sear on each side only flipping once they have come together and turned light brown.... About 3 to 4 minutes on each side.

  • Eat with "tartar" sauce - 1/2 cup avo mayo, 3tsp dijon mustard, 1 tbsp tomato paste, 1 tsp garlic and onion powder, 1 tsp sweet relish optional,1 tsp ACV, s/p to taste
