This lemon and herb chicken is juicy, flavorful, and satisfying!

1 Whole Chicken
Spice Rub: 1 tbsp dried sage, 1 tbsp dried rosemary, 1 tsp pink salt
2 lemons, sliced
Preheat your oven to 375 degrees Fahrenheit.
In a small glass bowl, mix the spices.
Put on disposable gloves. Carefully with 1-2 fingers, lift the skin away from the chicken flesh, creating a pocket to stuff the herbs and lemon.
Add the herbs and lemon slices up and under the chicken skin
Add chicken to a roasting rack.
Cook for 45-55 minutes until the internal temperature reaches 165F.
