Vodka & Lime Chicken Fajitas on Flax Wraps


This meal is one that I shared in my episode for low carb and keto diet. This meal clocks in at < 10 net cars per serving.

Chicken fajitas with salsa, avocado crema, all on top of a flax wrap!


Avocado Crema


Ingredients for Flax Wrap:

  • 1 cup ground flaxseed

  • 1 cup boiling water

  • 1/2 tsp cumin

  • 1/4 tsp pink salt

  • 2 tbsp avocado oil

Instructions:

  • Mix dry ingredients together.

  • Add hot water and mix.

  • Batter should be this.

  • Heat up avocado oil in a skillet over medium heat.

  • Add 1/4 of the batter to the pan.

  • Use a spatula to spread the batter out into 1/8 inch wrap.

  • Flip and cook for 2-3 minutes on the opposite side.

  • Use spatula to remove the wrap from the pan.

  • Lay the on a paper towel lined dish to drain excess oil.

  • For a fun variation, use cinnamon instead of cumin for a sweet wrap.

Ingredients for Lime Vodka Chicken :

  • 2 chicken breasts on the bone

  • 1 lime, juice and zest

  • 1/2 cup vodka

  • 2 cloves garlic

  • 1/4 tsp pink salt

Instructions:

  • In a large, reusable plastic bag, add add ingredients.

  • Close the bag.

  • From the outside, take a few seconds to rub the marinade all over the chicken.

  • Let sit for 4 hours or overnight if possible.

  • Add chicken to a ceramic or cast iron baking dish and bake at 400 F for 50-55 minutes.

  • One it is cooked and has slightly cooled, use two forks to shred chicken.

  • Pour all the juices from the baking dish over the met to keep it moist.

  • Build the fajita!

  • Use the wrap, chicken, salsa, and my avocado crema!
