Sesame Tahini Sauce for Noodle Pad Thai

This is one of my favorite take-out fake-out dishes. Meaning, it has all the flavor of takeout without the unfavorable ingredients.


Ingredients:


  • 1 1/2 cup tahini

  • 1/3 cup coconut aminos

  • 1/4 cup apple cider vinegar

  • 1/4 cup water

  • 3 cloves garlic

  • 2 small shallots

  • 3 tbsp grated fresh ginger (to taste) (you can substitute in 1 tsp dried ginger)

  • 2 tbsp toasted sesame oil

  • 8 oz rice noodles, cooked

  • 8 oz zucchini noodles, raw

  • 1/2 lb sautéed ground turkey - can swap in chicken or fish

  • Toppings: sesame seeds, scallions, limes, red pepper flakes to garnish if desired.

Instructions:

  • In your plate, add 2 oz cooked rice noodles 2 oz zucchini noodles, 3 oz ground turkey on top.

  • For the sauce, add the remaining ingredients to a blender or food processor. Process until smooth.

  • If its too thick, add water by the tbsp until sauce becomes smooth and creamy.

  • Pour desired amount over noodles. Top with lime juice, sesame seeds, scallions. Add cooked veggies, too!

  • Store in refrigerator for up to 7 days.
