Quinoa & Black Rice Stuffing

This stuffing has all the feels and flavors of hearty, thanksgiving stuffing. It is one of the recipes I shared on my premier TV show. Watch the whole episode! < Click


  • 2 cups cooked quinoa

  • 1 cup black rice

  • 1 cup sautéed or roasted celery

  • 1 cup sautéed or roasted onion

  • 1 cup roasted butternut squash

  • Optional * 1/2 cup sautéed, organic sausage, fat discarded

  • 1/4 cup chopped pecans

  • 1/4 cup chopped, dried apricots

  • Dressing:

  • 1 large orange, zest and juice (about 1/2 cup)

  • 1 tsp dried sage

  • 1/2 tsp pink salt

  • 1/4 cup olive oil


  • Mix all ingredients in a large bowl.

  • Add all dressing ingredients into mason jar and shake vigorously until all ingredients are emulsified.

  • Add the desired amount of dressing to the stuffing salad and toss.

  • If possible, let the salad sit for about 60 minutes prior to serving.

  • When serves, topped with pecans.
