This stuffing has all the feels and flavors of hearty, thanksgiving stuffing. It is one of the recipes I shared on my premier TV show. Watch the whole episode! < Click
2 cups cooked quinoa
1 cup black rice
1 cup sautéed or roasted celery
1 cup sautéed or roasted onion
1 cup roasted butternut squash
Optional * 1/2 cup sautéed, organic sausage, fat discarded
1/4 cup chopped pecans
1/4 cup chopped, dried apricots
1 large orange, zest and juice (about 1/2 cup)
1 tsp dried sage
1/2 tsp pink salt
1/4 cup olive oil
Mix all ingredients in a large bowl.
Add all dressing ingredients into mason jar and shake vigorously until all ingredients are emulsified.
Add the desired amount of dressing to the stuffing salad and toss.
If possible, let the salad sit for about 60 minutes prior to serving.
When serves, topped with pecans.
