Keto Chocolate Cake w/ PB Frosting

Ingredients:

  • 4 large eggs

  • 1/2 cup melted coconut oil (or avocado oil)

  • 1 1/2 teaspoon stevia

  • 1 teaspoon vanilla extract

  • 1 cup almond flour

  • 1/2 cup unsweetened cocoa powder

  • 1/2 cup plant milk of choice (no added sugar!)

  • 1/4 teaspoon pink salt

  • 1/2 teaspoon baking soda

Peanut Butter Frosting:

  • 1/2 cup unsalted peanut butter, creamy

  • 1/4 cup plant milk of choice

  • 1 tsp stevia

  • 1/2 tsp vanilla extract

  • 1/8 tsp pink salt


INSTRUCTIONS


  • Preheat oven to 325 degrees F.

  • Use additional avocado or coconut oil to grease an 8x8 in baking dish

  • In a large mixing bowl or stand mixer, whisk together the eggs, oil, stevia, and vanilla extract.

  • In another bowl, mix flour, baking soda, cocoa powder, salt.

  • Gradually add the dry mixture to the wet and mix.

  • The batter is VERY thick! This is okay!

  • Pour the batter into your baking dish and smooth out the top. It is too thick to settle during the baking process and will look almost exactly like how your put it into the dish when its all cooked.

  • Bake for 18-20 minutes, until a toothpick comes out clean from the center.

  • While the cake bakes, whisk the frosting together until whipped.

  • Allow the cake to cook to room temp before frosting or it will melt!

  • Also, this cake is SOOOO good!! I'd suggest portioning it!
