GF Sweet Potato Gnocchi

  • 2 cups almond flour + extra for flouring your table

  • 2 med sweet potato cooked to soft - MEAL PREP!

  • 2 large eggs

  • 2 tbsp arrow root

  • 1/2 tsp salt


  • Mix all ingredients in a stand mixer.

  • Flour your work station and knead the dough for 2-3 minutes until it is no longer sticky and comes together in a large ball.

  • Roll out a piece of dough into 1/2 inch in diameter logs.

  • Cut the long into 1 inch peices.

  • Use a gnocchi paddle or fork to roll the gnocchi across to get ridges.

  • Bring water to a boil and drop 8-10 gnocchi into the water.

  • After they float to the top, use a skimmer or strainer to receive the gnocchi.

  • Toss cooked gnocchi with olive oil to precent sticking until your top with sauce and serve.

  • Repeat until all of the gnocchi are cooked.

  • Top with sauce of choice. I used my KALE PESTO.
