This recipe came from Episode 10 of the Eat Your Way to Wellness

1 small onion, diced
3 cloves garlic
2 tbsp olive oil
3 -24 oz jars of pureed tomatoes
2 tsp dried oregano
1 tsp dried parsely
1 cup fresh basil
1/2 tsp pink salt
1 cup cashews, soaked for 4 hours
1 cup plant based milk
1 cup vodka
In a large sauce pot, saute onion on low heat for 12-15 minutes.
Add garlic, oregano, and parsley and saute for 4-5 minutes.
Add pureed tomatoes.
Add 1/4 cup water to each tomato jar and shake to release remaining tomatoes.
Pour into sauce pot.
Simmer for 20 minutes on low heat.
Puree cashews in a food processor .
Add vodka, cashews, milk and simmer sauce for an additional 20 minutes.
Serve with pasta of choice.
