Chocolate Wafer Cookies with Cashew Cream

Weight loss goals have people motivated to exercise more and make more whole foods choices. However, for many people, these changes can be life altering. Changes likely to be overwhelming, especially if you aren't sure where to start. Rushing into any decision, big or small, can leave room for error, resentment, and most importantly, lack of longevity.


My biggest advice is to start with what you know and like. Just one small change per week t reduce processed ingredients can make a huge difference in overall wellness.


THIS recipe is taking something that I LOVE and providing an option that makes me feel good when I eat it.


Ingredients for the Cashew Filling:

  • 1 1/2 cups soaked cashews (soaked for 4 hrs and drain liquid)

  • 1/4 raw, organic honey

  • 1 tbsp melted coconut oil

  • 1 tbsp vanilla extract

  • 1/4 tsp sea salt


Ingredients for the Cookie:

  • 1 cup oat flour

  • 3/4 cup cocoa powder

  • 1/2 cup coconut sugar

  • 1/4 tbsp softened coconut oil

  • 1 tsp vanilla extract

  • 1 large egg

  • 1/2 tsp expresso powder

  • 1/4 tsp sea salt

Instructions for the Filling:

  • In a food processor, process all ingredients.

  • Store in refridgerator while you make the cookies.

  • IMPORTANT: THE FILLING IS DELICIOUS!! DO NOT EAT WHILE WAITING FOR COOKIES TO BAKE (LIKE I DO!)

Processing for the cookie:

  • In a stand mixer or with hand mixer, combine eggs, vanilla, and coconut sugar.

  • Add cocoa powder and expresso and mix.

  • Add flour and salt and mix.

  • The batter should be thick.

  • Line your baking pan with parchment paper.

  • Use an ice cream scoop to scoop out cookies and scoop them out with about 1 inch between cookies.

  • Flatten each scoop with the bottom of a glass or your hand. Try to get them as flat and even as possible!

  • Cook at 350 for 15-17 minutes.

  • Allow cookies to cool completely cool on a baking rack. If you don't have a baking rack you can slide the parchment onto your counter off the hot pan.

  • When cool, use a spoon or piping bag to "fill cookies" with filling.

  • Fill ONLY the cookie you plan to eat. Letting the filling sit for too can cause the cookies to become soggy.

  • Store remaining cream in refrigerator and cookies in a cookie tin.

  • ENJOY!
